THE TECHNICAL STUFF:
Machine harvested on the 4th February from a 10 year old Tempranillo vineyard in the heart of Pokolbin. The fruit was then placed into a cool cellar where it underwent spontaneous fermentation with wild yeast from the vineyard. Fermentation took eight days to complete and the wine was left on skins for 17 days to extract more colour and tannins before being basket pressed and transferred to a mix of old and new French oak puncheons. The wine was matured for seven months before bottling with zero additions to maximise freshness and flavour. Drink now or cellar for up to 5 years.
