A UNIQUE FIELD BLEND OF HUNTER VALLEY REDS
Blend of Cabernet Sauvignon, Shiraz, Tempranillo, Merlot and a handful of Traminer skins. Vegan friendly.
LOOK FOR:
Ruby red colour, delicious perfume of raspberries and cherries with soft tannins and fresh acidity.
DRINK WITH:
Pizza, pasta and parties.
TECHNICAL STUFF:
The fruit was hand picked from four select Hunter Valley vineyards before being combined in an open fermenter. The grapes were then crushed and whole bunch fermented using a mix of two different yeast strains for added complexity. Some Traminer skins were also added to the ferment to increase the aromatics of the wine. "The Little Circus" was then pressed off in a wooden basket press before being matured in French oak puncheons. This wine is light enough that it can be served at both room temperature or lightly chilled and will be best consumed over the next 5+ years.
