THE TECHNICAL STUFF:
The fruit was sourced from an old abandoned vineyard in Broke in the Hunter Valley. The grapes were hand harvested and spent eight days on skins to extract the maximum amount of aromatics and flavour before being pressed off. Fermentation began naturally without the addition of any added yeast. Once fermentation was almost completed the wine was hand bottled and capped. It was then left for three months to finish fermenting in the bottle and to impart subtle yeast complexity.
